Roasted Curried Cauliflower with Goat Cheese Tomato Sauce

Such a great side dish to salmon and rice!
Wow! Roasted curry cauliflower with tomato goat cheese sauce is so satisfying. A true comfort food. The taste of curry and goat cheese really brings the flavor out in this cauliflower dish! Truly one of our favorites. Easy to make! Delicious and truly comforting. This side dish can go with almost anything. We love it with chicken or fish. Enjoy!
1 head cauliflower
1 can tomato sauce
1/4 cup finely chopped onion
4 tablespoons coconut oil
3 teaspoons curry powder
3/4 teaspoon coriander
1/4 teaspoon pink Himalayan salt
1/4 teaspoon cinnamon
1 teaspoon lemon juice
1/2 teaspoon granulated garlic
1/2 cup crumbled goat cheese
- Cut cauliflower into small florets and toss in a bowl with 2 tablespoons of melted coconut oil. Heat oven to 400 degrees. Spread on a baking sheet lined with parchment paper. Roast for 10 minutes then turn florets over and roast another 10 minutes.
- Meanwhile, heat remaining tablespoon of coconut oil in a medium saucepan. Add finely chopped onion sauté until translucent. Add tomato sauce, granulated garlic, curry powder, coriander, cinnamon, and lemon juice. Saute for 5 minutes.
- Add goat cheese, sauté for another 5 minutes or until goat cheese is melted. Add pink sea salt. Stir well.
- Remove cauliflower from oven and add to the sauce. Stir well and serve.
