Instructions
  1. Cut off ends of zucchini put each through a spirilizer using the curly blade.
  2. Clean carrot and put through a spirilizer using the curly blade.
  3. Heat 2 tablespoons of coconut oil in a large saute pan. Add zucchini and carrots. Saute on medium heat until soft.
  4. Add sun-dried tomatoes, garlic, and hearts of palm. Saute another 5 minutes.
  5. Add 1/4 cup of vegetable stock and 1/2 cup of goat cheese until melted.
  6. Add chives, thyme, basil, salt and pepper. Keep warm.
  7. Coat salmon fillets with remaining tablespoon of coconut oil on each side. Salt and pepper each side. Heat on George Foreman grill for 2-3 minutes or in a grill pan 3 minutes per side.
  8. Plate vegetables and top with salmon. Garnish with a lemon wedge and fresh basil and/or parsley. Serve, enjoy!
