I love Shepards Pie.  Now we have a new tradition, Bison Butternut Squash Shepards Pie.  St. Patrick’s Day so brings out the little bit of Irish in all of us.  I grew up in South Bend, Indiana and Notre Dame and the fighting Irish were part of my heritage.  How could I transcend this traditional recipe and still keep it’s integrity?  I so love mashed or as we would call them smashed potatoes.  My gosh, that is what made this recipe comforting.  I hope this version represents the true essence of what The Shepard would find comforting. Let’s keep the pie, add a leaner meat, and increase the nutritional aspect with the butternut squash.  Oh, and with keeping with our theme; let’s not skimp on taste.  So we are not settling.  Never, ever.  The pungent flavors of the black bean jalapeno addition totally transcends this recipe to its height.  Stand tall, layer and let it me good!

Let’s make every bite count.  Why put a morsel in your mouth that is not calorie worthy, or for that matter….nutritonally worthy.  Please read your labels.  You have a wonderous beautiful body.  Pretend it is a car, let’s say it’s a Porsche.  Would you not treat it right, baby it, give it a squeeze, wax it, insure it.  Go for check ups, oh and I bet a regular oil change would never be missed.  OK case and point, take care of the things that matter.  Trust me, don’t do snail maintenance, it doesn’t work.  You deserve and will benefit from thinking and eating smart.  So on this St. Patrick’s Day 2015 think like the saints would, May the sound of happy music, and the lilt of Irish laughter, fill your heart with gladness, that stays forever after. And may the luck of the Irish bless you and yours.

Instructions
Roasted Butternut Squash
  1. Preheat oven to 375 degrees. On a parchment lined cookie sheet put a rinsed whole butternut squash of coconut oil on each half. Add 1/4 teaspoon of sea salt and 1/4 teaspoon of freshly ground pepper. Roast for 45 minutes. Let cool slightly. Slice in half lengthwise. Remove seeds. Spread 1/2 teaspoon of coconut oil on each half. Add 1/4 teaspoon of sea salt and 1/4 teaspoon of freshly ground pepper. Return to oven for 10 minutes. Remove from oven let cool, slice and peel off the skin. (Can make ahead)
Bison with sweet onion
  1. In a large saute pan heat 1 tablespoon of the coconut oil on a low/medium heat. Add ground bison and saute on medium heat until browned.
  2. Add diced sweet onion. Saute for 5 minutes or until onions are translucent. Add the elephant garlic. Saute another 5 minutes or until the garlic is fragrant. Add 1/4 teaspoon of sea salt and 1/4 teaspoon of freshly ground pepper.
Black Beans with Jalepenos
  1. Melt 1/2 teaspoon of coconut oil in a large saucepan. Add red onions and orange peppers. Saute for 5 minutes. Add elephant garlic and saute another 5 minutes. Add black beans ,jalepenos & tomatoes.. Stir well. Heat on low/medium heat and cover for 5 minutes. Stir, cover, and keep warm.
Put it all together
  1. Preheat oven to 350 degrees.
  2. Spread 1/2 teaspoon of coconut oil onto a 8x10 casserole dish. Arrange butternut squash slices on bottom of dish.
  3. Add kale pieces on top of the squash. Spread the black bean mixture on top of the squash.
  4. Spread the bison mixture on top of the black bean mixture.
  5. Spread the cheddar cheese mixture on top of the bison mixture. Cover with foil.
  6. Bake for 20 minutes. Remove foil and bake another 10 minutes or until cheese is melted. Remove. Top with chopped kale stems. Serve.
