Sautéed Zucchini with Sweet Onion & Fennel

 

This is such an easy recipe and so tasty!  Sautéed Zucchini with Onion & Fennel.  I love the subtle hint of the crushed fennel seeds and the spiciness of the fresh cracked pepper.  A great accompaniment to white fish, or poultry.

When choosing a green zucchini or otherwise known as a courgette make sure its skin is bright green and shiny.  The size that is the sweetest and juiciest is one 6-8 inches long.  The larger they get the more seeds they have and the meat is tougher.  There is only 18 calories in a cup of sliced raw zucchini.  The zucchini also is a good source of potassium which can help keep blood pressure in check.  Eat the peel it is a great source of fiber which can offer some protection against colon cancers.  This is a natural addition to include in an anti cancer diet.

Instructions
  1. In large sauté pan, heat olive oil on med/low heat.
  2. Add zucchini and onion sauté on medium heat until zucchini is slightly golden on one side and onions are translucent. Approx. 5 minutes. Toss to cook other side until golden another 5 minutes
  3. Add salt, pepper, and crushed fennel, toss. Serve!
