Purple potatoes have a medium starch level. This makes them perfect for roasting or baking or even mashing. Don’t over cook or they can become a little mushy. Purple potatoes are very rich in antioxidants. They have four times more antioxidants than a Russet potato. This helps build your immune system and can help prevent certain cancers, making this perfect for an anti cancer diet. They are also high in potassium which helps regulate blood pressure, keeping your heart healthy. One half cup of the luscious purple wonders have 15 carbs, a little less than a Russet, but they sure pack a better nutritional punch. Instructions
  1. Heat oven to 375 degrees.
  2. Wash and clean the potatoes. Pierce each potato several times with a fork.
  3. In an ovenproof saute pan melt coconut oil. Add potatoes until all are evenly coated. Add salt & pepper.
  4. Cover with Aluminum foil. Roast for 15 minutes. Turn potatoes over and roast another 15 minutes or until a fork comes out easy.
  5. Add chopped parsley, toss well. Serve.
