Wow!  Roasted curried cauliflower with goat cheese tomato sauce is so satisfying.  A true comfort food.  Roasting is one way to keep the nutrition integrity in tact, especially for cauliflower.  This is so much better than boiling. I also love to use parchment paper when I roast vegetables.  It saves on clean up and is much healthier than using aluminum foil.  Just don’t broil with it! It could catch on fire.

The taste of curry, coriander, cinnamon, garlic, and goat cheese really brings the flavor out in this cauliflower dish! Truly one of our favorites. Easy to make! Delicious and truly comforting. This side dish can go with almost anything. We love it with chicken or fish. Enjoy this roasted curried cauliflower with goat cheese tomato sauce! You could also use this sauce over broccoli, and even chicken or shrimp.

Roasted Cauliflower
  1. Cut cauliflower into small florets and toss in a bowl with 2 tablespoons of melted coconut oil. Add sea salt and curry powder. Toss. Heat oven to 400 degrees. Spread on a baking sheet lined with parchment paper. Roast for 10 minutes then turn florets over and roast another 10 minutes.
Curried Tomato Sauce
  1. Heat 1 tablespoon of coconut oil in a medium saucepan. Add finely chopped onion sauté until translucent.
  2. Add tomato sauce, garlic powder, curry powder, coriander, cinnamon, and lemon juice. Saute for 5 minutes.
  3. Add goat cheese, sauté for another 5 minutes or until goat cheese is melted. Stir well. Serve
