Chanterelle Mushroom Sauce over Spinach with Roasted Carrots

I was walking through Costco the other day and came across these beauties!  Wow they not only looked great, but the price was pretty special too.  Not sure exactly what I am going to make but a great mushroom sauce sounds devine.    I hope you like my creation of Chanterelle mushroom sauce over spinach with roasted carrots.

Chanterelles are not only tasty but nutritionally they are packed with protein, vitamin D, vitamin B, potassium and selenium.

Chanterelles can strengthen the immune system with not only selenium, but also with beta glucans.  Beta glucans are a  major building block to making your immune system strong.  I highly recommend checking in to the benefits of beta glucan.  I take a beta glucan supplement once a week.  My husband takes a beta glucan supplement daily.

Chanterelles and mushrooms in general are among the best foods for improving the immune system.  This also helps keep the immune system from being prone to infections.  Chanterelles have anti cancer compounds that destroy cancer cells and prevent the growth of new cells by removing free radicals.  Anti aging effects are also a benefit of Chanterelles.

Chanterelle Mushroom Sauce
  1. Heat olive oil and butter in a larger saute pan. Add sweet onion and saute on a low/medium heat for 5 minutes or until translucent.
  2. Add cleaned Chanterelle mushrooms and saute for 10 minutes, or until golden brown. Add garlic and saute another 5 minutes.
  3. Add cream sherry, goat cheese, rosemary, salt, and pepper. Blend well. Cover and simmer for 5 minutes.
  4. Add crushed fennel seeds and stir until blended. Simmer for 2 minutes.
For the Carrots
  1. Preheat oven to 375 degrees. Line an ovenproof saute pan with parchment paper. Add carrots coated with coconut oil, salt and pepper.
  2. Roast for 30 minutes r until golden and fork tender. Slice each carrot in two lengthwise.
For the Spinach
  1. Heat water and add frozen spinach. Cook over medium/high heat for 5 minutes. Strain water. Add coconut oil and stir.
  2. Plate with spinach top with mushroom sauce and surround with the sliced carrots. Garnish with chopped parsley.
