I was reading about a cabbage soup diet, which specified to add really any vegetables you might have on hand. Put in a pot and add water. That cabbage soup to me seems just a little boring and lacking any flavor. So why not enhance the flavors of these so good for you veggies. Braise those vegetables! Bring out all of those wonderful aromas that entice your taste buds to water. Adding the subtle hint of coconut oil and braising the vegetables in it adds a bit of depth to this old time popular diet soup. Besides that, you truly are bringing out the great benefits of cabbage which is rich in Vitamin C and sulfur.  Enjoy this cabbage soup braised and spicy!

Ingredients

Instructions
  1. Cut cabbage in half, then in 1 inch wedges. Now cut wedges in 3" pieces. Set aside. Cut vidalia onions in half, then in 1/2" pieces. Set aside. Cut carrots and celery in 1/2" pieces and set aside.
  2. Heat 1 tablespoon of coconut oil and add 1/3 of cabbage. (You will have 3 batches.) Braise on med-high heat until cabbage leaves start to turn a little brown. Deglaze with 1/2 cup of water. Add 1 tablespoon of coconut oil as you add each batch. Move each batch to a large stock pot.
  3. Heat 2 tablespoon of coconut oil and add onions, carrots, and celery. Braise as you did the cabbage. Deglaze with 1/2 c. water. Add to the cabbage.
  4. Add remaining ingredients. Let it come to a boil. Reduce and simmer for 40 minutes or until tender. Adjust seasonings as needed. Serve.
