Black Bean Pasta with Tomato Sauce

I have been on the search for good pasta alternatives and came across a black bean pasta.  I was in Costco and they were doing a taste testing.  This was really good.
I decided to buy the big package and see what I might come up with to compliment this new tasting pasta. The food combination of broccoli and tomatoes is really good for prostate cancer.  I have read many articles on how effective this combination is. Peppers are also great at fighting prostate cancer.  A study in the journal Cancer Research says that capsaicin, (the compound that puts the heat in the pepper) can cause prostate cancer cells to commit suicide.  Black olives are also really good.  In fact, the International Olive Council states that eating a Mediterranean diet could prevent 10% of prostate, pancreas, and endometrial cancers, and 15% of breast cancer, and 25% of colon cancer, according to a recent health research study they published.  So let’s make black bean pasta with a spicy broccoli tomato sauce. This is a perfect anti cancer diet recipe.  I love a spicy sauce and adding the flavor of a banana pepper and the Tuscan Italian spice and red pepper flakes will go along well with the garlic, onions, and green bell peppers. A little sweetness is easily added with the addition of the sweet Vermouth.  There is no sugar in Vermouth, and the alcohol content of 4.3% will dissipate in the cooking process.  All of these great flavors blended well. Let this simmer on low for a couple of hours to enhance all the goodness.  I wanted the broccoli to bring an added crunch to the dish, so add this 10 minutes before you serve it up.  So please enjoy this black bean pasta with tomato sauce.

Broccoli Tuscan Tomato Sauce
  1. n a large saucepan, heat coconut oil on a low heat until melted. Add onions, green bell pepper and banana peppers until soft.
  2. Add garlic and sauté another 5 minutes, or until garlic is fragrant
  3. Add black olives, crushed tomatoes, diced tomatoes, sweet Vermouth, and spices. Bring to a boil. Reduce heat and simmer on low for 1 hour. Stir occasionally.
  4. Add broccoli to the sauce. Stir well. Let cook on low for 10 minutes.
Black Bean Spaghetti
  1. Thirty minutes before serving, heat 8 cups of water in a 3 quart saucepan and bring to a boil.
  2. Add the pasta to the boiling water. Reduce heat to a gentle simmer for 6-8 minutes, or until pasta is cooked al dente. Rinse under cold water. Return to saucepan and add olive oil. Stir and reheat.
  3. Plate the pasta and top with the Broccoli tomato sauce. Serve. Enjoy!
