Gluten-free and a spice of life recipe that’s filled with flavor and more…I love Mexican food. The spicier the better. With that being said, literally it is true, spicy food is really good for you. Especially peppers with some heat.  The poblano is one of my favorite peppers.  I think it has a slight smoky flavor with just enough heat.  So indulge in this bison and poblano wet burritos.

The bison is a great substitute for ground beef.  It is much leaner than beef and has some great nutrients.  It is 97% fat-free.  Make sure you sauté it in some olive oil to keep it moist.  The protein content is 40% more than ground beef. There are a couple of wows!  Ancient Indians knew and lived a healthy life that was long and lean.  A lesson to be learned.

Another favorite of mine is Desert Pepper black bean dip.  Addicting!  It has a wonderful hint of chipolte pepper that is amazing.  This is my secret ingredient that completes this burrito to palette satisfaction.

The tortilla in this bison and poblano wet burrito is gluten-free and fairly low in carbs.  The vegan cheddar cheese also makes this such a healthier version of the traditional burrito.  You will be amazed at the nutritional values in this one dish wonder.  Enjoy.

Burrito Sauce
  1. In a small saucepan add the tomato sauce, taco seasoning, hot sauce, and lime juice. Heat to boiling. Reduce heat to a low simmer and cover.

  1. Preheat the oven to 350 degrees.
  2. Heat a large saute pan over medium heat. Add the ground bison and saute for 10 minutes or until browned.
  3. Add onions, poblanos, and jalepenos. Saute for 5 minutes or until onions are translucent and peppers are soft. Add 2 tablespoons of the taco seasoning mix and 1/4 cup of water. Mix well.
  4. On a parchment lined plate add 1 tortilla and cover with another piece of parchment paper. Heat in microwave for 30 seconds or until tortilla is soft. Transfer tortilla to a clean plate.
  5. Add bison onion pepper mixture to the tortilla. Add 2 tablespoons of the black bean dip. Roll tortilla up. Repeat with the second tortilla.
  6. On a parchment lined casserole dish add 2 tablespoons of the tomato sauce. Add each burrito to the dish. Spoon the remaining tomato sauce on to the burritos. Top with the shredded cheese. Bake in oven for 20 minutes or until the cheese is melted.
  7. Plate each burrito.
  8. Top with lettuce, avocado, tomato, and olives. Serve. Enjoy!
