Baked White Fish Almondine
This baked white fish almondine also has vegan Parmesan cheese to give it a nice crunchy flavorful crust. This is such an easy and quick dish to make. Of course, the fresher the fish the better. In regards to the almonds, I so recommend almonds that have been soaked overnight and dehydrated. The extra nutritional value is so worth it. Then Dijon mustard is a great substitute for traditional mayonnaise, plus it provides that extra pungent flavor that enhances the overall flavor of the dish. The vegan Parmesan is also a great substitute for regular Parmesan and keeps you dairy free.
Serve with roasted purple potatoes along with sautéed zucchini and onion with fennel seeds. Delicious!
