Artichokes with a Spicy Vegan Aoli Sauce

Artichokes with a spicy vegan aoli sauce will truly impress anyone. Artichokes are one of my husband’s favorite foods. He loves the way I cook them in a pressure cooker. The texture is perfect! The flavor of the balsamic and tarragon are a perfect match.

The aoli dipping sauce compliments the artichokes flavor with hints of cumin, paprika, lemon, and Worcestershire. I have made this recipe for years, however I used to make the aoli sauce with regular mayonnaise, the vegan mayonnaise is a great substitute, and so much healthier.  You can also use this Aoli sauce for a shrimp dip in lieu of a cocktail sauce or even for a chicken skewer appetizer sauce.  Delicious!  This is another Eat Real Simple recipe that doesn’t skimp on taste.  This recipe is so easy and elegant. I hope you enjoy it.

Note: If you don’t have a pressure cooker, use a dutch oven. You will need twice the water, bring to a boil. Cover and cook on low/medium heat for 45 minutes. Drain.

Also, if you are lucky enough to get an artichoke with a long stem, you get an extra dose of the “heart” the prime part of the choke.  The stem tastes just as good as the heart itself.  Cook it up and enjoy!

The USDA rates artichokes number 7 in antioxidant content.  Artichokes contain quercetin which has been proven to reduce the chance of getting cancer. They also contain polyphenols which are said to have chemopreventive qualities.

For the Artichokes
  1. Rinse Artichokes. Trim artichoke stem. If the stems are too long for the pot, cut the extra length and add to the pot. Cut the sharp points off the leaves.
  2. Add 2 cups of water to a large pressure cooker. Bring to a boil.
  3. Add artichokes, olive oil, balsamic vinegar, and tarragon.
  4. Cover and tighten lid until pressure builds up. Reduce to a medium heat.
  5. Cook for 20 minutes. Remove from heat. Let pressure reduce naturally. Remove lid. Remove with a large straining spoon. Plate and serve with sauce.
Spicy Vegan Aoli Sauce
  1. In a small bowl add Vegan mayonnaise, lemon juice, worstershire sauce, cumin, and chili powder. Mix well.
